Hot Spot Analysis and IDW Raster question

Hello,

I have been following the tutorial Hot Spot Analysis for ArcGIS 10.1 (Tutorial) on this page https://blogs.esri.com/esri/arcgis/2010/07/13/spatial-statistics-resources/ and have a question about the IDW grid.

I have used my own dataset, points that have a field count, which is the number of orders per address.  I am using this field to create the hot spot dataset, which looks correct. Then I created the IDW raster using this and something does not look right.  The dataset range is irregular, round on one end and long narrow on the other.  I think this might have something to do with why the resulting grid has what are best described as streaking to the edge of the grid from the data.  These streaking areas are originated in the hot spots, so they show up as long hot spots, which is not a correct representation. Maybe the IDW is not the best choice?  Not quite sure where to go from here.  

I find as I study cluster analysis I keep learning more and more...

Any ideas on how remedy this would be helpful 

I did try the poly-line extent option, but then the raster does not match the point level hot spot data.
