Can you change the color scheme from light to dark?  In AutoCAD, you can do this in Options-Window Elements-Color scheme.

Application options, there are two:  Light and Dark.

There is no "Personalize" selection within General under the Application group.  I am running ArcGIS Pro 1.2 and navigating to the PROJECT tab - Options - General.  Where is the Theme drop-down menu?  There is no "Personalize" option there.

Personalizing the application theme was introduced in ArcGIS Pro 1.4 (see What's new in ArcGIS Pro 1.4).  Seeing that ArcGIS 1.2 is being retired this September, it might be a good time to consider upgrading to 1.4.
