Good morning

In ArcMap there is an option to check/uncheck "Edit a Version o the database with the ability to undo and redo in ArcGIs Pro".

Where is this option in ArcGIs Pro?

@SanchezNuñez - this checkbox does not exist in ArcGIS Pro to my knowledge.  By default, it you do not register a feature class as versioned, that feature class is using a non-versioned editing workflow in the Map View.  The checkbox means that you want to switch to editing a versioned feature class in the ArcMap dataframe.

To test, I added two feature classes into a single Map View in ArcGIS Pro, one traditionally versioned and one non-versioned.  I could edit both in the same Map View.  For my non-versioned edits, as expected, I had no undo/redo capabilities nor could I save or discard the edits.  For my versioned edits, I could do versioned editing without any problems - undo/redo was available as was save/discard.
