Hi everyone. I'm new to GIS and am trying to do more with information I've been collecting on a variety of surveys and biological inventories. I'll more than likely be posting a lot of absolute noob questions along the lines of "why is this thing greyed out?", etc. I'm currently hip deep in everything AGO on youtube, so if there are any other resources I should be checking out, I'd appreciate the suggestions!

You are in the right place.  This community is a good start for resources.  You can also check out Esri's training site, esri.com/training.  BTW...greyed out layers indicate a scale dependent layer.  You will have to zoom in closer to view the feature until it is no longer grey.

Both offer structured learning of concepts. The MOOC does a good job at evaluating your mastery of a subject area.
