Raster Mosaic in ArcGIS 10.3.1 Displays Rainbow Colors

I'm building a raster mosaic out of MrSID orthoimagery using ArcGIS 10.3.1.

The source image looks like this:                                        The image within the raster mosaic looks like this:

What's going on here? Why does the mosaic display different color values than the source imagery?

There are numerous different sources, but all have the same problem, mainly where I would assume the values are (255, 255, 255). My gut instinct is that something is going wrong with the stretch. It's currently set to Minimum-Maximum, with Statistics 'From Mosaic.' But altering any of those values doesn't seem to change a thing. I'm at a loss.

Thanks for that link, Dan. It turns out that scrapping the problem mosaic dataset and simply starting again from scratch solved the issue. I'm still not clear why this occurred, but thankfully it was an easy fix!
