Creating a mosaic dataset containing raster data from multiple dates—Help | ArcGIS Desktop is using ArcMap to create this master mosaic dataset of multiple dates. Is there a similar workflow using ArcGIS Pro?

The workflow would be the same except the steps will be slightly different for adding the Year field and how you access the service in the section Adding the Service as an Overview.
