The buffer tool in Analysis>Proximity will let you select a field to get the buffer size from. Make sure that the dissolve type is set to none so that any overlap will not be dissolved into a single polygon.

I did try it thanks, BUT the problem is that when you select the distance (of buffer) by "Field" the unit can not be modified. My map is in Lat Long decimal degrees, and my buffer need to be in meters...
Whatever unit your z values are in, just add a field and calculate to the values to the new field converting to meters. The tool units will be based on the projection you have the points defined in. Run the buffer tool from Catalog or a map with only that shapefile in it and there should be no problems.
